The production of dried fruit must go through tedious steps such as cleaning, slicing off defects, cutting in half, slicing and then candiing, and generally requires about 20 hours of baking.


The principle of drying is very simple, but the drying rate, temperature and wind strength will greatly affect the flavor of the finished product. After many trials and adjustments, I found the most suitable speed and temperature. At the beginning, the baking temperature is a little higher, so that the surface of the dried fruit becomes hard, and the color of the dried fruit is controlled, and it is not easy to ferment; then the temperature is slowly lowered to allow the water to fully evaporate. Dried fruit has passed the international exhibition unit SGS certification.
